Preserving the Harvest

So, lets be honest…we’re not all farmers. Despite the excitement we probably experience when a shiny seed catalog arrives in the mail in the spring, we’re not really talking about “preserving the harvest” here because we have fields of extra produce. More likely scenarios are that:

1. The garden to you did plant produced more of a yield of one particular thing than your family can use before it would spoil. Because despite what you have seen in the movies, gardens do not produce idyllic amounts of shiny perfect produce spread leisurely over the whole growing season. When the corn is ready, the corn is READY! So… you either share it with friends and family, if you are enterprising you might sell or barter some of the bounty, or you preserve it in a way that you can enjoy it through out the year. Does anyone else hear the theme song from Little House on the Prairie right now?
2. Someone else was in the exact position described above and passed along some of their garden yield and now you want to know what to do with it. Our recipes section is helpful for small quantities of acquired edibles. For larger quantities, we circle back to the idea of preserving.
3. This is quite frankly the category that I fall in more often than not… you find a great deal on bulk produce. It is too good of a deal to pass up. Unfortunately, it is also probably near the end of it realistic shelf life and needs to be used or preserved sooner than later.

I get inquiries all the time asking me, what is the best way to preserve “_____” Unfortunately, there is no cut and dried answer. There are a few factors to consider before I can answer that. 1. How much space do you have? How much freezer space do you have? How much pantry space do you have for canning jars? (not to mention how many jars you have) How much storage space do you have for dry goods? Because climate control is important for this method. Because IF the BEST way to preserve something is freezing and you have the world’s tiniest freezer, or your freezer is already loaded to the hilt, then freezing is NOT the best method because it is not the best method for YOU. Besides, it’s rare that there is only one good way to preserve something.
